Popbar, the internationally recognized artisan gelato and sorbetto pop brand, is opening a brand-new production kiosk at the Veranda shopping center in Concord, California. The location marks a homecoming for Popbar at the Veranda — and for the Bajaj family, who are returning to a space and community they love.

The Concord kiosk is owned and operated by Sarabjit "Sarab" Bajaj and his son Nitin, longtime Popbar franchisees who previously operated at the Veranda before this fresh start. Their new build is a purpose-engineered production unit: every gelato and sorbetto pop is made fresh on-site, daily, using Popbar's proprietary recipes. Guests choose a base flavor, have it dipped to order in white, dark, or milk chocolate, and finish it with premium toppings — all in under 60 seconds.

The kiosk structure itself is a first-of-its-kind build for the Concord market. Sarab and Nitin worked with architects, city permitting officials, and CenterCal's construction team to engineer a custom kiosk that meets Contra Costa County code requirements while delivering full production capability in a compact footprint. The result: a sleek, efficient kiosk that produces every item on the menu in-house.

Popbar Concord will open with a lineup of more than a dozen flavors — nine gelato varieties including Vanilla Bean, Pistachio, Dark Chocolate, Sea Salt Caramel, and Coffee, alongside five sorbetto flavors including Mango, Lemon, Raspberry, and Passion Fruit. All pops are available with dip and topping add-ons. Mini pops at $3.50 make the experience accessible for all ages.
